These quick and easy to make falafels are a great tasting healthy meal to try this summer. Serve them with salad, halloumi, or sweet potato fries to complete this delicious dish.

Here's what you'll need...

  • Chickpeas (x1 400g tin)
  • Onion x 1
  • Garlic cloves x 2
  • Ground coriander 1tsp
  • Cumin 1tsp
  • Baking powder 1/2 tsp
  • A pinch of salt, pepper and cayenne pepper
  • Coconut oil to grease
  • Fresh coriander
