    A Coffee-Lover's Cheesecake

    If you like cheesecake and/or coffee, then this might be the perfect (and simplest) dessert recipe for you.

    "With the days getting duller and the seasonal lethargy kicking in, who can resist this quick and easy pick-me-up to give you a caffeine boost? So, this dessert combines the flavours of a cheesecake washed down with a cup of coffee with the creamy coolness so needed while sat in front of the fire this season. It´s easy to make and will definitely go down a treat with your family or guests."

    Here´s what you´ll need...

    • 150g cream cheese
    • 300ml double cream plus extra for decoration
    • 150g golden caster sugar
    • 3 large egg yolks
    • 2 espresso shots
    • digestives and dark chocolate for decoration

    Here´s how it´s done... Step 1

    First of all make two espresso (espressos, espressi, caffè espresso – I think the jury is still out on the correct plural)

     

    Step 2

    Whisk the double cream until stiff, put into the fridge

     

    Step 3

    Whisk the egg yolks and the sugar until pale and fluffy.

     

    Step 4

    Add the espresso whilst continuing to whisk.

     

    Step 5

    Now whisk in the cream cheese.

     

    Step 6

    Get the cream from the fridge and fold into the mix with a spatula.

     

    Step 7

    Pour the mix into four glasses and put into the fridge to set.

     

    Step 8

    When ready to serve, top with whipped cream, crushed digestives and grated chocolate.
