    Watermelon Rice Krispy Treats

    Sometimes you just need fun and colourful food that doesn’t really serve any other purpose than to make you and your guests smile.

    "Of course it will fill you up to an extent, but let’s face it, Rice Krispy treats in shape of watermelon slices are not what you’d serve as a meal, right? They’re colourful, fun, a little bit silly – and will be a total hit! I’m not the first one to make these and I’ve found several versions online, however, I’ve decided to put my own twist on them by not using any artificial food colourings. Instead I went with completely natural colours which also add some flavour: freeze-dried raspberry powder and matcha tea powder. In a way they add to the fun: who expects to bite into a piece of melon and taste raspberry?"

    Here´s what you´ll need...

     For the green ring:

    • 150g mini marshmallows
    • 50g Rice Krispies
    • 20g butter
    • 5tsp matcha tea powder

    For the red middle:

    • 200g mini marshmallows
    • 80g Rice Krispies
    • 30g butter
    • 5tsp freeze-dried raspberry powder
    • 2 tsp mini chocolate chips
    • a little extra butter to grease the tin

    Here´s how it´s done... Step 1

    Lightly grease the cake tin.

     

    Step 2

    Starting with the green ring, put the butter and marshmallows into a large pot.

     

    Step 3

    Sit the pot over a low-medium heat and slowly melt the butter and marshmallows whilst stirring.

     

    Step 4

    Once melted, add in the matcha powder and stir until you have an evenly green mix.

     

    Step 5

    Now add the Rice Krispies and stir until they’re all coated.

     

    Step 6

    Scrape the mix out of the pot into the baking tin and leave to cool for a moment.

     

    Step 7

    Lightly grease your hands (to avoid the mix sticking to them) and form the outer ring which should be around 2.5cm deep.

     

    Step 8

    Repeat the whole cooking process with the second batch and the raspberry powder.

     

    Step 9

    With lightly greased hands, press the red mix into the middle and against the green ring.

    Leave to cool before adding the chocolate chips, pressing them down lightly

     

    Step 10

    Cut into 8 wedges.
