    Blueberry Muffins

    Not just a great treat, but a bake the kids can get involved in too

    Blueberry muffins are really quick and easy to whip up. So, not only are they a great sweet treat, but they’re a bake the kids can get involved in that’ll keep them entertained. Don’t believe us? Try it out.

    Here´s what you´ll need...

    • 100g unsalted butter softened, plus 1 tbsp, melted, for greasing
    • 140g golden caster sugar
    • 2 large eggs
    • 140g natural yogurt
    • 1 tsp vanilla extract
    • 2 tbsp milk
    • 250g plain flour
    • 2 tsp baking powder
    • 1 tsp bicarbonate of soda
    • 125g pack blueberries

    Here´s hwo it´s done... Step 1

    First off, pre-heat your oven to 200C/180C fan/gas 6 and prep 12 tins with a muffin case. Then you’ll need to get making your batter. To do this, you’ll need to beat the butter and caster sugar together until it’s light and fluffy. Next, beat in your eggs, yoghurt, vanilla extract and milk and keep mixing for around a minute.

     

    Step 2

    In a separate bowl, combine the baking powder, bicarbonate of soda, and salt before folding it all into the wet ingredients you’ve already prepped.

    Step 3

    Spoon out the mixture into the separate muffin cases, making sure not to overfill each one. Then, add a few blueberries on top of each one. Put these in the oven, lowering the temperature to 180C/160C fan/gas 4 after 5 minutes. Continue to bake until the muffins have risen (approx.15-18 minutes).

     

    Step 4

    Check they’re fully baked by sticking a toothpick into the middle and it should come out clean. Leave these to cool before tucking in. Yummy!
