Blueberry muffins are always a firm family favourite, especially when they’re so easy to make that the kids can get stuck in and help too. The only problem is that they’re so delicious they might not last too long…

Here's what you'll need...
- 110g/4oz plain flour
- 110g/4oz butter
- 65g/2½oz caster sugar
- 2 free-range eggs
- 1½ tsp baking powder
- 125g/4½oz blueberries, or equivalent in frozen blueberries
Set oven temp: 200C/180C Fan/Gas Mark 6
Here's how it's done...

Cream the butter and sugar together then slowly add the eggs before mixing for three minutes. Add the flour and baking powder and stir to combine, then refrigerate for at least an hour.

Place a spoonful of muffin mixture into each muffin case. Stud each muffin with about eight blueberries.

Bake for 20 minutes, or until golden on top.

You could serve them with double cream or if you can’t quite wait that long enjoy them just as they are!
