    Champagne & Raspberry Truffles

    Handmade ALWAYS wins for Mother's Day so why not try whipping up these champagne and raspberry truffles as a treat?

    "With Mother’s Day not far away, our thoughts turn to gifts that give the right message. The message usually being one of love and appreciation. No pressure then! It can be hard to find the right thing, something pretty (flowers?) and meaningful (a card?) that will make mum smile. From personal experience (being a mum and having a mum!), I know that something sweet and handmade ALWAYS wins. Knowing that somebody has taken the time and gone through the effort to create a gift from scratch makes it extra special and truffles never fail to impress. These champagne and raspberry truffles are absolutely perfect for the occasion and make the loveliest gift when presented in a pretty box."

    Here´s what you´ll need...

    • 400g white chocolate
    • 150ml double cream
    • 75ml champagne (or prosecco)
    • 5tsp raspberry powder
    • 20g raspberry powder to roll the truffles

    Here´s how it´s done... Step 1

    Break up the chocolate and put the pieces into a large bowl.

     

    Step 2

    Bring the double cream to a boil.

     

    Step 3

    Pour the hot cream over the chocolate.

     

    Step 4

    Leave to stand for a minute, then stir to combine.

     

    Step 5

    Add the champagne/prosecco and mix. Then add the raspberry powder and whisk until all combined.

     

    Step 6

    Put cling film on top of the mix (touching it) and leave to cool for around 2 hours.

     

    Step 7

    Cover a baking tray with cling film.

     

    Step 8

    Using a tea spoon, scoop out a heaped amount and form into a ball.

     

    Step 9

    Roll the balls in the raspberry powder.

     

    Step 10

    Put the truffles into a box for presentation.
