    Gluten-free Cinnamon Apple Bread Pudding

    A large dish of bread pudding is always a winner and, since this recipe is gluten-free it's sure to leave all your guests smiling!

    "Making pudding for a crowd can sometimes be a bit daunting and quite time-consuming, especially if you’re looking to make individual portions. So why not make things easier on yourself with a very seasonal and satisfying dessert that doesn’t take too much time but is guaranteed to make everybody happy?"

    Here's what you'll need...

    • 1 x 400g loaf gluten-free bread, sliced into half slices
    • 3 large apples, cored, peeled and sliced
    • 400ml full fat milk
    • 400ml single cream
    • 6 eggs
    • 120g golden caster sugar
    • 1tbsp ground cinnamon
    • 2tsp vanilla extract
    • Butter for greasing

    Here's how it's done... Step 1

    Start by generously greasing a large oven-proof dish with butter and put the milk and cream into a saucepan, add the vanilla extract.

     

    Step 2

    Bring the mix to a simmer and then take off the heat. Put the eggs, sugar and ground cinnamon into a bowl.

     

    Step 3

    Whisk with a hand mixer until light and fluffy, now add the warm milk mix and whisk again.

     

    Step 4

    Place a layer of bread slices into the greased dish and cover with apple slices then place the second layer of bread on top of the apples.

     

    Step 5

    Scatter the remaining apples on top. Now pour the egg/milk mix on top of the bread and apples and bake for 50 minutes.

     

    Step 6

    Serve warm with single cream, ice cream or custard.
