Is there anything better than some fresh and juicy watermelon on a hot summer day? Seriously, it’s one of those things that are an absolute must during the hot season and the flavour alone can (mentally) transport you to beautiful holiday destinations. Eating watermelon can, however, sometimes prove a little impractical and messy. And since it’s just as important to hydrate on a hot day, why not have a wonderfully refreshing ice tea? A rose and watermelon ice tea sweetened with a little honey. The subtle flavour combination of florals and fruit works so well and is a great treat on a lazy afternoon.

 

Here's what you'll need...

  • 1kg watermelon
  • 3 heaped tbsp dried, organic rose petals (best to buy from an organic retailer)
  • 2tbsp honey (feel free to add more if you prefer it sweeter)
  • 750ml boiling water
  • Ice cubes

Here's how it's done...

    Boil the water and pour over the rose petals.

    Add the honey and stir in, leave to steep and cool down.

    Chop the watermelon into chunks and remove as many pips as possible. Blitz the melon chunks in a blender.

    Pour the melon juice through a fine sieve into a large jug.

    Now add the rose tea, also straining it through the sieve.

    Add ice cubes and refrigerate before serving.
