They say breakfast is the most important meal of the day. Most days it’s something I’ve just grabbed, it needs to be quick and (apart from my obligatory coffee) I’m not too fussed about whether it’s hot or cold. Then there are days when I want something a little more special. And a little more exceptional. Exceptional because it’s not the kind of breakfast I could eat on a daily basis, but one that is a great treat on a Sunday morning or a lazy Bank Holiday.
An American pancake breakfast is exactly the right thing for such occasions. Fluffy pancakes, sweet maple syrup and crispy bacon are a fabulous combination which tastes like a real treat. You will, of course, need slowly brewed coffee to go with it, and if you want to feel just a little bit good, add a grapefruit!
