I’m not really a coffee person, and I’m definitely not a ‘let it set in the fridge overnight’ person, which a lot of Tiramisu recipes call for.

If you’’re going to put any effort into making a silky, chocolate-based dessert, the last thing you want to do is cling film it up and put it in the fridge for 8 hours… while you munch on some fruit.

So here’’s a quick, easy recipe that you can whip up just before dinner and have ready and waiting for you when you finish. If you don’’t like chocolate orange, just leave out the orange, simple as that!

 

here's what you'll need...

  • 250g of marscapone cheese
  • Half a vanilla pod
  • 3 tablespoons of Irish Cream Liquor
  • 150ml of cold espresso (or strong coffee)
  • 150ml single cream
  • 4 tablespoons of icing sugar
  • 20 spongefingers
  • 1 tablespoon of cocoa
  • Dark chocolate
  • 1 large orange

here's how it's done...

    Whisk the mascarpone, vanilla and Irish Cream Liqueur with 80ml of the espresso until smooth.

    In a separate bowl whisk the cream and icing sugar together then fold it into the mascarpone mix.

    Quickly dip the sponge fingers into the espresso and use them to line your serving bowls.

    Spoon in the mascarpone mix, then stick them in the fridge for 20 minutes.

    Grate the dark chocolate over each bowl, dust with cocoa (I use a sieve) and then grate the orange peel over to finish.

    Serve! And take all the credit for making a delicious, flavour-infused Tiramisu in under an hour.
