It’s coffee week and that calls for coffee in all sorts of ways. Ok, for me, admittedly, it’s always coffee week/day/hour. I’m a big coffee drinker and have only in the past year made the switch to drinking tea in the afternoon. You know, it helps with the sleep.

Anyway, coffee can be served in so many ways (no, I won’t even start counting them) and adding a little extra flavour can be a great way to make your brew at home a little different and more special. You will probably be familiar with all the coffee syrups that are out there, but why spend money on something that you can easily make yourself and that will be this little bit healthier. Yes, a healthier sugar syrup. How? Well, for these I’ve used coconut sugar which has a lower glycemic index than regular caster sugar and is also suitable for followers of the paleo diet. Curious? Then take a look at my recipes below, the three flavour syrups I chose to make were orange & chocolate, cinnamon & almond and vanilla & cardamom.  I hope you’ll enjoy your coffee with these flavours.

 

Here's what you'll need...

  • 500g coconut sugar
  • 500ml water
  • peel of one orange
  • 2tsp chocolate extract
  • 2 cinnamon sticks
  • 2tsp almond extract
  • 1 vanilla pod
  • 3 cardamom pods
  • 3 x 250ml bottles
  • funnel

here's how it's done...

  • 1

    Cut the vanilla pod along the whole length and scrape out the seeds. Smash the cardamom pods to release the seeds.

    Thinly peel the orange.

    Put the ingredients into the bottles:

    • Orange peel & 2tsp chocolate extract
    • cinnamon sticks & 2tsp almond extract
    • vanilla pod, seeds & cardamom seeds

    Put the sugar and water into a saucepan and bring to a boil whilst stirring. Once the syrup is boiling, turn the heat down and simmer for 5 minutes.

    Pour the hot syrup (very carefully!) into the prepared bottles with the help of the funnel.

    Leave to cool before putting the tops onto the bottles, you will be able to keep these syrups for around 3 months.
