As we’re ever so slowly moving away from summer and towards autumn things like baking become a little more tempting. I mean, who would want to stand in the kitchen with the oven on when it’s 32C outside, right? However, it’s this strange time of the year that feels a little “between the seasons”: we’re not quite ready to let go of summer, but the first signs of autumn are clearly here. So, how better to bridge this time than by baking some bread that simultaneously reminds us of summer and has some autumnal warmth without having to endure the hot oven?

A ciabatta with optional rosemary that can be enjoyed warm dipped into some olive oil and balsamic vinegar or with some salted butter is the perfect solution for that, wouldn’t you say? And it’s easy enough to make with help of the Panasonic Automatic Bread Maker – no hot oven in sight. So, here’s a recipe perfect for a late summer day.

 

Here's What You'll Need...

  • 500g strong white flour
  • 1 tsp yeast
  • 310ml water
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp sugar
  • Optional: one tsp finely chopped rosemary
  • Olive oil for brushing
  • Optional: rosemary to serve

Here's How It's Done...

    Put the ingredients into the bread maker in the following order:

    Yeast, flour, sugar, olive oil, salt, water, chopped rosemary.

    Turn on the bread maker to ‘menu 11’ for 4 hours 30 minutes (or check your manual for the best Ciabatta setting if you have a different model).

    Once done, carefully remove the bread from the tin with oven gloves.

    Brush with a little olive oil and (if you fancy) garnish with some rosemary.
