French onion soup is one of those simple dishes that are easy to prepare, taste great and have a certain rustic elegance about them. And of course it’s perfect for cold autumn days without being too heavy. Serve with a lovely glass of wine to complete this dish.

Here's what you'll need...

  • 650g onions (about 3 large ones)
  • 120ml dry white wine
  • 600ml chicken or vegetable stock
  • 40g butter
  • 1tbsp plain flour
  • Salt & pepper for seasoning
  • 4 slices of baguette
  • 80g gruyere

  • 1

Melt the butter in a large pan (preferably non-stick) over a high heat without letting it brown anfd turn the heat down to medium and add the onions.

  • 2

Cook the onions whilst frequently stirring for 5 minutes until softened then season with salt and pepper.

  • 3

Turn the heat to low and cook the onions for 30 minutes whilst stirring occasionally until lightly browned and add the flour and stir until well combined.

  • 4

Now add the white wine and stir until there are no clumps then add the stock and stir.

  • 5

Bring the soup to a boil and then simmer whilst toasting the baguette slices then toast the baguette slices under the grill until golden.

  • 6

Turn the slices around and top with the grated cheese then grill until the cheese has melted.

  • 7

Pour the soup into two bowls and top each with two slices of cheesy baguette.
