Biscotti, which in Italian means ‘twice baked’, are wonderful crunchy biscuits traditionally served with strong coffee or sweet dessert wine.

They’re actually really simple to make and you can give them a personal touch by adding different types of nuts, chocolate or dried fruit. Biscotti are excellent as homemade gifts as they keep really well in an airtight container; if you can bear to share that is.

The dough can easily be made by hand and requires only basic baking skills. It is then shaped into a log and baked once then sliced and baked again to dry out. You can even drizzle or dip your biscotti in melted chocolate after they have cooled down.

 

here's what you'll need...

  • 250g plain flour, plus more for dusting
  • 100g caster sugar
  • 100g raw almonds, roughly chopped
  • 2 medium eggs
  • 1/2 tsp baking powder
  • couple drops almond or anise extract (optional)

here's how it's done...

    Preheat the oven to 180C (fan 160C). Line a heavy tray with baking paper and dust with a little flour. Put the eggs, sugar and almond extract, if using, in a large bowl. Vigorously whisk together until light in colour and frothy – about 3 minutes. Combine the flour and sugar and sift over the eggs. Mix together with a wooden spoon until just combined.

    Add the chopped almonds and mix together until incorporated.

    Form the dough into a log shape about 3cm high and transfer onto prepared tin. Bake for 25-30 minutes until just starting to colour. Remove from the oven and cool for 10 minutes. Turn the oven temperature down to 160C. Using a serrated knife, carefully slice the log into 2cm thick slices. Spread the slices on the baking tray and return to the oven for a further 15-20 minutes until crisp and slightly coloured.

    Transfer to a wire rack to cool completely. Serve with coffee or sweet dessert wine.
