Sometimes we just need something that we can whip up in 15 minutes flat. You know, when those unexpected guests turn up, the kids get back from school and it’s too early for dinner or you need a quick lunch. Pizza is a favourite with pretty much everybody, so it would be hard to go wrong with it. Since making pizza dough from scratch might seem a stretch too far when you’re in a hurry, here’s a fab alternative: ready-made crisp bread slices. Might sound strange, but works so well!

 

Here's what you'll need...

  • 6 round crisp bread slices
  • 3tbs tomato purée
  • 150g mozzarella, cut into small chunks
  • 6 cherry tomatoes
  • 35g pepperoni or chorizo slices
  • 1tsp dried oregano

Here's how it's done...

    Preheat your oven to 200C. Spread the tomato purée onto the crisp bread slices.

    Top with mozzarella chunks.

    Slice the tomatoes and place on top of the mozzarella.

    Sprinkle with the dried oregano.

    Place on a baking tray and bake for 10 minutes. Serve straight away.
