Of course it will fill you up to an extent, but let’s face it, Rice Krispy treats in shape of watermelon slices are not what you’d serve as a meal, right? They’re colourful, fun, a little bit silly – and will be a total hit! I’m not the first one to make these and I’ve found several versions online, however, I’ve decided to put my own twist on them by not using any artificial food colourings. Instead I went with completely natural colours which also add some flavour: freeze-dried raspberry powder and matcha tea powder. In a way they add to the fun: who expects to bite into a piece of melon and taste raspberry?

Here's what you'll need...

 For the green ring:

  • 150g mini marshmallows
  • 50g Rice Krispies
  • 20g butter
  • 5tsp matcha tea powder

For the red middle:

200g mini marshmallows

  • 80g Rice Krispies
  • 30g butter
  • 5tsp freeze-dried raspberry powder
  • 2 tsp mini chocolate chips

– a little extra butter to grease the tin
