    Air Fryer Cheesy Chilli Chicken Bites

    These celebratory bite-sized chicken pieces are easy to make and even easier to eat!

    As a doctor, mum and MasterChef UK champion, there’s nothing Dr Saliha Mahmood Ahmed doesn’t know about food that makes you feel good. With Eid at the doorstep and armed with her trusty Ninja Foodi air fryer, her cheesy chilli chicken bites are the perfect prescription for very happy tummies!

    Here's what you'll need… 

    Serves 4 generously
    600grams chicken breast cut into bitesize pieces
    100gram Greek yoghurt
    75g mature cheddar cheese
    2 tablespoons double cream
    1 teaspoon grated garlic
    1 teaspoon grated ginger
    1 teaspoon cumin seeds
    1 teaspoon red chilli flakes
    ½ teaspoon fenugreek powder/ asafoetida
    Salt to taste
    Vegetable oil to brush

    To garnish
    Rocket leaves and pomegranate seeds (optional)

    Step 1

    Combine the yoghurt, cheese and cream with the garlic, ginger, cumin seeds, red chilli flakes and fenugreek powder. Season with salt to taste. This forms the marinade for the chicken.

    Step 2

    Mix the bitesize pieces of chicken into the marinade. Try to ensure that the pieces of chicken are not too large as this will risk them not cooking through fully. Allow to marinate for a few hours or overnight if possible.

    Step 3

    Lay a piece of greaseproof paper on the bottom of the air fryer. Place the chicken pieces on the greaseproof paper and brush with the oil.

    Step 4

    Air fry the chicken bites at 200degrees for 10-12 minutes depending on the size of your chicken pieces. You can check the chicken has cooked through using a meat probe if you wish.

    Step 5

    Serve on a platter strewn with rocket leaves and scatter over pomegranate seeds if you wish.

    That’s certainly got our mouths a-tingling! Remember, it’s easier to add heat than it is to take it away. When it comes to chilli flakes, a little goes a long way to get that kick, so start off small and work your way up to your desired heat – nobody wants an injury at Eid!
