Fan ovens can only be used with the fan, unless you are using the grill function, which can be used on its own. However, multifunctional ovens will give you the choice to cook your food with or without the fan.

No, you shouldn’t clean your oven’s catalytic liners with anything, otherwise they’ll stop working. But you can re-activate them by turning the oven up to full temperature for 90 minutes, make sure there is nothing in the oven when you do this.
