    Dr Chintals Coconut Spinach Daal

    Welcome back to my mini-series with @ao where we make easy healthy meals in a slow cooker.
    Daal is one of my favourite comfort meals of all time so having this easy recipe waiting for me after a long day at work is such a treat. You literally throw all the ingredients into your slow cooker and press start. It couldn’t be easier! Plus this recipe can be made entirely from store cupboard ingredients, perfect when you need a healthy meal but haven’t had a chance to pop to the shops!

    Serve with my quinoa rice or for a speedy meal, I often eat it in a bowl with a side of buttery toasted sourdough.

    Here's What You'll Need to Serve Four!

    • 1 red onion – chopped
    • 2 tsp cumin seeds
    • 300g red lentils – washed and drained x 3
    • 400g spinach
    • 400ml tin coconut milk
    • 400g tin tomatoes
    • 1 tsp minced ginger (or powder)
    • 1 tsp minced garlic (or granules)
    • 1 tsp turmeric
    • Salt to taste
    • Chopped coriander to serve

    Step 1

    Serve with rice or in a bowl with a slice of buttery toasted sourdough to dip in.
