    Dr Chintal's Rose Harissa Chicken

    Welcome to my new series with AO, where we whip up easy, healthy meals using a slow cooker!

    After a long day at work, I'm usually starving (maybe even more than the kids!), so it's such a treat to come home to a hot, ready-to-eat meal.

    I’m serving up this delicious rose harissa chicken with bulgur wheat, cucumber, and a sprinkle of pomegranate seeds. But if you prefer, you can pair it with rice and your favorite veggies

    Here's What you'll Need to Serve Four!

    • 4 chicken breasts
    • 4 tbsp Rose harissa paste
    • 1 red onion - chopped
    • 2 coloured peppers – chopped
    • 400g tin chopped tomatoes
    • 1 tsp cumin seeds
    • 1 tsp garlic - minced
    • Salt and pepper to taste

    To serve:

    • 1 cup bulgur wheat - cooked
    • 1 cucumber – roughly chopped
    • 100g pomegranate seeds
    • 30g coriander – chopped
    • 1 lime - quartered

    Step 1

    Add all the ingredients except the chicken to your slow cooker, give it a good mix and nestle in the chicken breasts

    Step 2

    Cook on low for 6 hours & enjoy!

    Step 3

    Serve with cooked bulgur, chopped cucumber, a sprinkle of pomegranate seeds, coriander & a squeeze of lime.
