• 100g rice (I used basmati)
• 2 tsp fajita seasoning
• 2 tbsp tomato purée
• 1/2 tin (approx. 160g) kidney beans
• 1/2 tin (approx. 160g) sweetcorn
• 220ml boiling water
• Guacamole or sour cream to serve - optional
Mix all the ingredients in a large glass microwaveable bowl
Mix well, cover with a heavy plate
Cook on high for 10 minutes. Leave covered for a further 5 minutes. Uncover, fluff up and serve! Enjoy with a side of guacamole or sour cream.
