Have just switched from gas to induction, and this is my first time using an induction hob, so still getting used to it. It seems ok but it's taking a while to use it intuitively. Had a frustrating experience cooking experience one time, with it just not warming the pan properly, but I then realised it was the pan rather than the hob. It was one of my old pans which was induction suitable, but it's just not good enough to heat consistently (in the way that my new pans are). On the plus side, I'm used to taking the pan off the stove while cooking to give it a jig and was worried I wouldn't be able to do that with induction, but the hob simply turns off momentarily and then remembers the setting when you place the pan down again. Takes longer than expected to cool down after turning it off.
