    Breakfast Toast Toppings

    Looking for a quick and easy breakfast alternative? Give these healthy spreads a try!

    Breakfast can be a tricky meal. We’re being told it’s the most important meal of the day, yet a lot of the time many of us just about manage to grab something quick and convenient. This often means that we’re not really going for the most healthy options. To be honest, when the kids are screaming and refusing to put their shoes on, the trains are running late, the boss wants a report by 9am and the weekly shop has yet to be done, a healthy breakfast will be the last thing on our mind. So, how about a few spreads/butters you can make ahead and just put on toast topped with some fresh fruit? Sound good? Well, I’ve come up with three healthy variations. Each only takes a few moments to blend in the Nutribullet (apart from the sunflower/sesame seeds which take a little longer) and you can keep them for up to a week. Just grab it in the morning, spread it on toast and top with some fresh fruit. I hope you like my suggestions.

    Coconut Butter, Banana & Cacao Nibs

    • 200g desiccated coconut
    • 1 banana
    • 1tbsp cacao nibs

    Put all the desiccated coconut into the Nutribullet and blend for a few minutes until a paste has formed. Decant into a bowl. Spread on toast, top with banana slices and cacao nibs.

    Honeyed Hummus & Apple Slices

    • 1 tin chickpeas (400g)
    • 1 tbsp tahini
    • 4 tsp honey
    • juice of ½ lemon
    • 1/4 apple

    Put all the ingredients apart from the apple into the Nutribullet and blend for about 3 minutes until you can see a smooth paste form. Scrape the hummus out into a bowl. Spread on toast and top with apple slices.

    Sunflower and Sesame Seed Butter with Pear and Honey

    • 200g sunflower seeds
    • 100g sesame seeds
    • 1/4 pear
    • honey to drizzle

    Put the sunflower seeds and sesame seeds into the Nutribullet and blend for a few minutes. You will need to occasionally scrape the sides with a spatula. Continue blending until you have a smooth paste, this will take around 10-15 minutes. Once done, scrape the butter into a bowl or jar. Spread generously onto your toast and top with pear slices and honey.
