    Christmas Pudding Ice Cream

    Add a festive touch to your desserts with this seriously addictive Christmas pudding ice cream. Packed with Christmassy flavours and totally delicious!

    "This ice cream is a seriously addictive treat packed with Christmassy flavours and a bit of “bite” due to the dried fruits. I have a confession: I don’t like Christmas pudding, but I really do like this one! One more thing, due to the alcohol in it, the ice cream will not freeze completely solid which makes it easier to scoop."

    Here's what you'll need...

    • 200g dried mixed fruits
    • 5tbsp dark rum
    • 600ml double cream
    • 3 large free range egg yolks
    • 100g golden caster sugar
    • ½tsp ground cinnamon
    • ½tsp ground ginger
    • ¼tsp ground nutmeg
    • ¼tsp ground cloves

    Here's how it's done... Step 1

    Put the dried fruits into a shallow bowl, add the rum, cover and leave to soak over night. The next day, drain the rum and put the fruits aside.

     

    Step 2

    Put the double cream into a saucepan and add the spices and bring the mix to a boil whilst stirring.

     

    Step 3

    Take the cream off the heat.

    Now beat the egg yolks and sugar together until light, fluffy and doubled in size.

     

    Step 4

    Continue to whisk the mix and slowly add the hot cream.

     

    Step 5

    Return the mix to the saucepan and warm over a low heat whilst continuously stirring.

     

    Step 6

    Keep heating the mix until it thickens and is coating the back of a wooden spoon and then pour the custard into a bowl and cover with cling film ON THE CUSTARD to prevent it from forming a skin.

     

    Step 7

    Chill for 2 hours then pour the chilled custard into your ice cream maker and churn for 20 minutes.

     

    Step 8

    Now add the dried fruits and churn for a further 5 minutes.

     

    Step 9

    Transfer all to a freeze-proof container and freeze for 4 hours before serving.
