    Chilled Pea & Mint Soup

    It's great British pea week so we're celebrating with a yummy chilled pea and mint soup recipe!

    Who’s up for soup? I know it might sound like the craziest thing when it’s hot outside, but bear with me because I’m talking chilled soup. I mean, I don’t know anybody who’d want some hot soup in this weather… Anyway, if you’re looking for a light, quick (unless you decide to shell your own peas), healthy and tasty dinner suggestion, then look no further. This chilled pea and mint soup works so well on a hot day and can be served as a starter or even main if the temperatures are messing with your appetite.

    Here's what you'll need...

    • 500g fresh peas
    • 1 small bunch of fresh mint
    • 2tbsp olive oil
    • 1 small shallot, chopped
    • 1 clove of garlic, chopped
    • 350ml vegetable stock
    • crème fraîche, soured cream or clotted cream for serving
    • salt & pepper (not shown) for seasoning to taste

    Here's how it's done.. Step 1

    Tear the leaves off the mint stems.

    Step 2

    Heat the oil in a saucepan and add the onion and garlic.

    Gently sauté the onion and garlic on a low heat for about 10 minutes until soft.

    Step 3

    Now pour in the stock and bring to a boil.

    Step 4

    Add the peas and boil again. Now add the mint.

    Step 5

    Leave to simmer for 5 minutes. Now whizz it all in a blender until smooth. Season to taste.

    Step 6

    Set aside to cool and then refrigerate until completely chilled. Serve with a dollop of cream and a mint leaf for decoration.
