    Warm Winter Puy Lentil Salad

    This salad served with warmed lentils makes the perfect side dish or light meal!

    What you'll need:

    • 100 grams of spinach
    • 100 grams of feta cheese
    • A jar of Sunblush tomatoes
    • 128 grams of Puy lentils
    • Vegetable stock

    Step 1

    First, you’ll need to prep your lentils. Give them a rinse and pour in 1.5 pints of water. Bring the lentils to the boil and then turn them down to a low heat, leaving them to simmer for 25-30 minutes.

    Step 2

    Grab a large bowl and pour the lentils and spinach in together. Slice up your feta into small cubes and add it into your bowl.

    Step 3

    Spoon in your tomatoes and toss the leaves with a wooden spoon. Finish with a sprinkle of bouillon powder.
