When you hear the word “burger”, what’s the first thing you’re thinking? Hamburger, right? Full with beef and possibly topped with bacon. That’s the way a burger generally looks. However, there is of course another way. It’s not exactly new, but it’s worth remembering that occasionally replacing meat with vegetables is not only healthy but can taste seriously great. These burgers are a fab example of how a meat-free meal can be really tasty as well as very filling. Topped with balsamic red onions and feta cheese, they beat any standard burger and will fast become a favourite dish. You will of course have to try them out to believe me…


Here's what you'll need...

  • 460g black beans (drained weight)
  • 2 medium sweet potatoes
  • 200g gram flour
  • 1 medium red onion, finely chopped
  • 1 handful fresh parsley, finely chopped
  • 1 garlic clove, finely chopped
  • salt & pepper to season
  • olive oil for brushing


  • 6 burger buns
  • mixed lettuce leafs
  • 300g feta cheese


  • 4 medium red onions, finely sliced
  • 1tbsp extra virgin olive oil
  • 3tbsp balsamic vinegar
  • 5tbsp caster sugar

Here's how it's done...

    Peheat your oven to 200C. Cut the sweet potatoes lengthwise and place cut side down on a baking tray. Put the potatoes in the oven and bake until soft, 30-45 minutes depending on size.

    Whilst the potatoes are baking, make the caramelised onions. Put the olive oil in a pan and add the sliced onions. On a low heat, cook the onions until they’re soft which will take around 20 minutes. Add the sugar and balsamic vinegar and cook for a further 5-10 minutes, occasionally stirring. Set the onions aside

    Put the black beans into a large bowl and mash with a fork.

    Scrape the baked potatoes and add to the mix, mash again with the fork.

    Add the chopped onion, parsley and garlic. Add the gram flour and combine all.

    Season well with salt and pepper. Shape 6 patties. Brush a baking tray with olive oil and place the patties on it. Bake for 15 minutes. Turn the burgers and bake for a further 10 minutes.

    Assemble the burger, top with the balsamic onions and serve.
