"Chances are that after Easter is over you will be left with tons of eggs, cute bunnies and an assortment of chocolate farm animals. I usually store all this leftover chocolate on a high shelf and try to dole it out to the children in a sensible manner until they, and I, usually forget about it."
Rather than leave all this chocolate goodness to go dusty, bring it all together and make Rocky Road. Not only will you use up all the leftovers, you will turn them into something glorious that will have everyone sighing with pleasure. What’s more you can involve the kids in this easy no-bake recipe.
Another great thing about Rocky Road is you can add pretty much anything you like to customise it. Dried fruit is usually included (raisins or dried cranberries etc) or crunchy biscuits or any nuts that take your fancy.
It’s also best to add a little good quality 60% cocoa chocolate in the mix if you can. This recipe makes a lot of Rocky Road. You can easily halve it and use muffin cups to make individual portions.
Lightly grease a tin or brownie pan and line with baking paper. Chop the nuts, marshmallows and assorted candy into smallish pieces and put in the freezer. This will prevent them from melting once folded into the warm chocolate.
Half fill a medium pan with water and bring it to a simmer. Place the Easter chocolate and butter in a large bowl and sit the bowl over the pan making sure that the bottom of the bowl doesn’t touch the water (double boiler method).
Let the chocolate and butter slowly melt, stirring occasionally, until smooth and silky. Stir in the golden syrup and take off the heat. Add the chopped nuts, marshmallows and candy, reserving a handful to spread over the top.
Stir everything together until thoroughly combined and then spread the mixture into the prepared pan.
Add the cooking chocolate and butter into the bowl you were using earlier and melt it using the double boiler method. Spread the chocolate over the rocky road to fill in any gaps then top with the reserved candy.
Put the rocky road in the fridge until set; up to 2 hours or longer.
Cut into squares using a large knife.
You can store the rocky road in the fridge for up to three days so you can enjoy it for even longer!
