These days it’s all about the colourful, insta-worthy, drinks. Right now it’s the Starbucks Unicorn Frappuccino that’s making all sorts of waves – not necessarily the good kind! In Australia the $8 Smurf Latte is another insta-sensation. On the foodie side, we have the hugely popular mermaid and unicorn toasts… If you fancy getting a little playful and whimsical with your drinks, then let me introduce you to the mermaid protein smoothie! It’s healthy, vegan and mega instagrammable!
Chill a large glass or mason jar in the freezer. Slice half the banana into thin rounds and cut into pretty shapes to decorate your glass (optional). Position the banana cut outs inside the chilled glass – this can be a bit fiddly! – and return to the freezer.
Put the milk, remaining banana, oats, protein powder, maple syrup, and spirulina in your blender. Process until smooth. Remove the glass from the freezer and carefully pour in the smoothie – a funnel might help. Fill almost to the top.
If you wish to decorate the smoothie with the coconut yoghurt, put in a small piping bag fitted with a large star tip. Carefully pipe the yoghurt over the smoothie.
Add the freeze-dried raspberries and coconut flakes to decorate. Add a pretty straw and drink immediately – but don’t forget to take an Instagram snap first!
