    French Onion Soup topped with Cheese Baguette

    French onion soup is one of those dishes that is so simple to prepare but tastes amazing, check out our favourite recipe!

    French onion soup is one of those simple dishes that is easy to prepare, tastes great and has a certain rustic elegance about them. And of course, it’s perfect starter for date night – not too heavy and goes lovely with a glass of wine.

    Here's what you'll need...

    • 650g onions (about 3 large ones)
    • 120ml dry white wine
    • 600ml chicken or vegetable stock
    • 40g butter
    • 1tbsp plain flour
    • Salt & pepper for seasoning
    • 4 slices of baguette
    • 80g gruyere

    Step 1

    Melt the butter in a large pan (preferably non-stick) over high heat without letting it brown and turn the heat down to medium and add the onions.

    Step 2

    Cook the onions whilst frequently stirring for 5 minutes until softened then season with salt and pepper.

    Step 3

    Turn the heat to low and cook the onions for 30 minutes whilst stirring occasionally until lightly browned and add the flour and stir until well combined.

    Step 4

    Now add the white wine and stir until there are no clumps then add the stock and stir.

    Step 5

    Bring the soup to a boil and then simmer whilst toasting the baguette slices then toast the baguette slices under the grill until golden.

    Step 6

    Turn the slices around and top with the grated cheese then grill until the cheese has melted.

    Step 7

    Pour the soup into two bowls and top each with two slices of cheesy baguette.
