It’s national sandwich week which of course means sharing some sandwich recipes with you! Not just a standard sandwich, however, not even just one, but three recipes! Three toasties filled with melted cheeses and flavoursome ingredients to make each one a little more special. And since they don’t contain any meat or fish, they’re all suitable for vegetarians as well. Now, one thing needs to be pointed out: if you’re looking for a very thick sort of toastie, you’d be better off pan-frying it. However, that also means that it would potentially be very messy and less practical. Making your toasties in a proper toaster means that they’re slightly easier to eat and you have less of a mess. And less of a mess means less tidying up and more time enjoying the sunshine. Convinced? Then here are the three recipes.
A little butter for each slice of bread
Finely chop the basil and mash together with the garlic, olive oil and pine nuts.
Butter one side of the bread and put onto the toaster plate buttered side down.
Top with mozzarella slices, tomato slices and basil pesto.
Add the second slice, buttered side facing up.
Toast for around 4-5 minutes until golden.

Heat the olive oil in a pan over a high heat. Add the sliced mushrooms and fry until browned.
Add the minced garlic and thyme leaves, stir and turn the heat off.
Butter the bread and place slices buttered side down onto the toaster (as for first toastie). Top with brie and mushrooms.
Add the second slices on top, buttered side up. Toast for around 4-5 minutes until golden.

Heat the olive oil in a pan over a high heat. Add the halloumi slices and fry until golden on both sides then remove from heat.
Butter the bread slices and lay two slices onto the toaster, buttered side down. Put the halloumi slices on top of the bread. Spread some harissa onto the halloumi. Top with walnuts and honey.
Place the second slice on top, buttered side up. Toast for around 4-5 minutes until golden.
