Sometimes I just need fast food. And when I say ‘fast food’, I mean food that I can prepare in the shortest amount of time possible. Because it’s been a long day, I’m hungry and I certainly don’t want to have to watch over a triple baked soufflé. At the same time, I don’t really want to have to fall back on beans on toast (nothing against beans on toast!), because I want something with a bit more flavour that might not be on my usual everyday menu. This is where vegetarian dishes can come in really handy. And tinned legumes! Mixed with fresh tomatoes and coriander and combined with some Indian spices, this easy version of a Chaat is perfect for one of those fast food moments.
1 tin chickpeas (400)
100g cherry tomatoes
1 small shallot, finely sliced
1 green chilli, finely chopped
¾ tsp Chaat Masala
½ tsp red chilli powder
½ tsp cumin powder
2 tsp lemon juice
2 tbsp fresh coriander, finely chopped
Salt for seasoning
Tip the chickpeas into a saucepan and gently heat them until warm.
In the meantime, chop the tomatoes into small chunks.
Drain the water from the cooked chickpeas.
Put all the ingredients into a bowl and mix.
Add the lemon juice and mix again until well combined.
Serve warm.
