Jackfruit has made a splash on the foodie scene – this exotic fruit’s flesh (when young and unripe) has a texture similar to pulled pork when cooked with sauce and seasonings. Pulled jackfruit tacos, ‘ribs’ and burgers are becoming Pinterest sensations and with good reason. You won’t believe this isn’t pulled pork – such is the similarity in both taste and texture. But don’t take my word for it – these pulled jackfruit burgers are super tasty, quick, and incredibly easy to prepare.
To serve
If your jackfruit is preserved in brine then rinse it in cold water and dry before using. Cut away the hard, woody centres and break up the flesh with your fingers. Put in a bowl.
Add the BBQ sauce, maple syrup, lime juice, chilli and spices and mix together. Season with salt and pepper.
Heat the oil in a large frying pan and fry the jackfruit for 5 minutes. Continue cooking for 10 minutes, adding the apple juice if the pan gets a little dry. Set aside.
Put the cornflour on a plate and season well with salt and pepper. Add the onion rings and toss to lightly coat.
Heat 1-2 tablespoons vegetable oil in a non-stick frying pan and fry the onions for a couple of minutes on each side or until nicely coloured and softened.
Layer your buns with tomato slices, lettuce leaves, the pulled jackfruit and onion rings. Serve immediately.
