    Mee Goreng – Indonesian Noodle Stir Fry

    A traditional street vendor meal, inspired by Indonesian travel!

    A noodle stir fry is a perfect dish when you need to whip up a quick meal that’s packed with flavour. Try this out when you’re rushed for time and feed your foodie heart.

    Here's what you'll need...

    • 1 nest of dried egg noodles
    • 2 tsp sesame oil
    • 1 egg
    • 1 clove garlic
    • 1 small red onion
    • 8 mushrooms
    • 1 red pepper
    • 1 pak choi
    • 2 tbsp mirin
    • 1 tbsp oyster sauce
    • A pinch of chilli powder
    • 2 tbsp dark soy sauce

    Here's how it's done...

    Step 1

    In a large pan, cover your noodles in water and bring them to the boil on a medium heat, stirring occasionally. Leave them to cook and soften for around 10 minutes.

    Step 2

    While your noodles are boiling, chop up all your vegetables.

    Step 3

    Scramble your egg in a frying pan until it has a fluffy consistency. This should take around 3-5 minutes.

    Step 4

    In the same pan, fry off your red onion and garlic, and once browned, add in the pepper, pak choi and mushroom.

    Step 5

    Pour in the soy sauce and oyster sauce, add a pinch of chilli powder, and mix it all into the vegetables.

    Step 6

    Add in the noodles and egg, and stir everything together.

    Step 7

    Serve and enjoy!
