    Six Canapé Recipes

    "Christmas is the time for a big feast, the huge bird and all the trimmings. Then of course come the days of eating leftovers, turkey sandwiches and all the chocolates we couldn’t actually fit in over Christmas, before vowing to be good next year and start that diet tomorrow."

    So, New Year’s Eve is not exactly the time when we feel like cooking up a huge meal. Depending on how I’m spending the evening, I usually opt for one of these two staples: cheese fondue for a family evening, or canapés for a party with friends.

    When it comes to canapés, there are two ways to go. You can start baking like crazy, faffing about with puff pastry and various fillings before collapsing on the sofa just as your guests arrive. The other option is to go for assembly only canapés, and this is my preferred way of handling it because, after all, I’d like to be able to enjoy the day and evening.

    These canapés are tasty, quick to make and don’t cost the earth. So, if this sounds tempting and you need a few ideas for your New Year’s Eve party, then you might just like what I’ve created here.

    These are six canapés that work really well with a glass of bubbly and which I’m sure will keep your guests happy.

    Mini backed potatoes

    Rub the potatoes with olive oil and sprinkle with sea salt.Put into the oven and bake for one hour.Once baked, cut a cross into the top and top with the cream, cheddar and chopped chives.

    Crostinis with goronzola

    Spread a teaspoon of Gorgonzola onto a crostini. Top with a small slice of Parma ham and dizzle some oak honey.

    Cherry tomatoes with mozarella

    Cut a tomato in half, put a cocktail stick through the tomato, then a basil leaf and a mozzarella ball.

    Blinis with smoked salmon

    Bake the blinis according to packet instructions (10 minutes at 200C should do). Top the slightly cooled blinis with half a teaspoon of the cream. Put a small slice of the smoked salmon onto the cream and top with a little caviar.

    Blinis with Brie

    Bake the blinis for 5 minutes at 200C. Cut out Brie rounds to fit the size of the blinis and shave off the top from the cheese. Place onto the blini and put back into the oven to bake for about 7-10 minutes until golden and slightly bubbling. Top with half a teaspoon of cranberry sauce.

    Crostinis with goat´s cheese

    Put 20ml water and 50g of sugar into a saucepan and heat up. Add 100g fresh cranberries and warm up until they just about pop. Take the cranberries out of the pan, pour onto a plate, cover with sugar and leave to cool. Top each crostini with a slice of goat´s cheese and at least three sugared cranberries.
