    American Pancake Breakfast

    "They say breakfast is the most important meal of the day. Most days it’s something I’ve just grabbed, it needs to be quick and (apart from my obligatory coffee) I’m not too fussed about whether it´s hot or cold. Then there are days when I want something a little more special. And a little more exceptional. Exceptional because it’s not the kind of breakfast I could eat on a daily basis, but one that is a great treat on a Sunday morning or a lazy Bank Holiday."

    An American pancake breakfast is exactly the right thing for such occasions. Fluffy pancakes, sweet maple syrup and crispy bacon are a fabulous combination which tastes like a real treat. You will, of course, need slowly brewed coffee to go with it, and if you want to feel just a little bit good, add a grapefruit!

    I have adapted the recipe from Nigella Lawson. There are only so many ways you can make a pancake, really.

    Here´s what you´ll need...

    • 110g flour
    • 150ml semi skimmed milk
    • 15g butter, melted and cooled
    • ½ tbsp. baking powder
    • 1 tsp sugar
    • 1 large egg
    • 8 rashers streaky bacon
    • Ground coffee
    • Maple syrup
    • Butter for frying

    Here´s how it´s done... Step1

    Mix the flour, baking powder and sugar in a bowl and make a well in the middle. Beat the egg and add to the flour mix. Add the milk and melted butter and whisk all until well combined. Transfer the mix to a jug from which you can pour it into your pan.

     

    Step 2

    Turn your grill onto high heat. Lay out the bacon on a tray covered with greaseproof paper. Put the bacon under the grill and, turning once, grill until crispy. Once the bacon is done, put it onto some kitchen towel to soak up the excess fat.

     

    Step 3

    Heat a small pan on a medium heat with a little butter and add the batter to roughly the size of your palm. Fry until you see the top bubbling up then flip the pancake and fry for no longer than a minute from the other side.

     

    Step 4

    Once all the pancakes are done, pile them up, pour over the maple syrup and serve. Don’t forget to brew some coffee!
