2 hours (incl. prep and baking)

Halloween is not far away and if you're planning a party instead of just dishing out sweets to children whose names you don't know, then this might be just the thing. A simple cake with dark chocolate and a cream cheese vanilla icing. By the way, no real cats were harmed in the making of this cake.

    Ingredients:

    For the cake:

    • 425g flour
    • 325g caster sugar
    • 350ml vegetable oil
    • 250g crème fraîche
    • 3tbsp dark cocoa
    • 2 eggs
    • 2tsp vanilla extract
    • 1tsp white vinegar
    • 1tsp bicarbonate of soda
    • 1/2 tsp salt
    • 1 bottle (38ml) of black food colour
    • M&S Scaredy Cats

    For the frosting:

    • 300g Philadelphia cream cheese
    • 150g butter
    • 300g icing sugar
    • 1tsp vanilla extract

    Step 1

Preheat your oven to 180C and grease three baking pans, each about 23cm in diameter. In a large bowl, mix the flour, sugar, cocoa, baking soda and salt.

In a mixer, beat oil, crème fraîche, eggs, vinegar and vanilla extract on low speed just until well combined.

Add the food colour and mix again.

Next, add the flour mixture bit by bit and beat 2 minutes on medium speed.

    Step 3

Divide into the three prepared tins

Bake for 25 to 30 minutes.

Take out of the oven and cool for 10 minutes before remove from forms. Leave to cool completely.

    Step 4

To make the frosting, mix the butter, cream cheese and vanilla extract until smooth.

Add the icing sugar and mix until combined.

Place the first cake layer on a plate and top with some frosting.

Repeat with the other two layers and then spread the frosting in a deliberately uneven way spreading some of it down the side of the cake

    Step 5

    Decorate with the cats.

    Happy Halloween!
