Good food doesn’t always have to be big, complicated or involve lots of preparation. Most of us don’t have the time to assemble a three course meal after work and sometimes we just want something simple and comforting. A few good quality ingredients can turn a simple dish into something very tasty and a sandwich into a real meal. This Spanish-style sandwich is one of my son’s favourites. The idea comes from a food stall in Greenwich Market, but since I’m not always prepared to travel 3 miles for a sandwich, I’ve started making my own and have adapted it slightly.


here's what you'll need...

  • One large olive ciabatta
  • 2 good quality Spanish chorizos per person
  • One roasted and pickled red pepper per person
  • A good handful of fresh rocket per person
  • A little olive oil for frying

    Preheat your oven to 200C (180C fan). Cut each chorizo lengthwise into half.

    Put the ciabatta into the oven. Pour the olive oil into a griddle pan and heat up. Put the chorizo into the hot pan with the sliced side down and fry until browned. Turn the chorizo, fry the other side and then set aside.

    Put the whole peppers into the pan (with the oil which has been flavoured by the chorizo) and fry from both sides.

    Take the ciabatta out of the oven, cut into three or four pieces and halve each of them. Assemble the sandwich by putting a pepper on first, then four chorizo halves, the rocket and the other ciabatta half. Serve with some garlic and onion yoghurt.
