Good food doesn’t always have to be big, complicated or involve lots of preparation. Most of us don’t have the time to assemble a three course meal after work and sometimes we just want something simple and comforting. A few good quality ingredients can turn a simple dish into something very tasty and a sandwich into a real meal. This Spanish-style sandwich is one of my son’s favourites. The idea comes from a food stall in Greenwich Market, but since I’m not always prepared to travel 3 miles for a sandwich, I’ve started making my own and have adapted it slightly.
