    Mango Lassi with Cardamom, Pistachios and Rose Petals

    All the deliciousness of Mango Lassi but healthier!

    Mangoes always transport me back to my childhood. I remember how my mum used to hand me and my siblings a very ripe mango each with a teaspoon as a mid afternoon treat /bribe to shut us up (albeit not for long). It often resulted in sticky kids with mango juice running down their arms. Such an appealing thought. I know.

    This Mango Lassi reminds me of those days because it really celebrates the mango. The flavour of the mango isn’t masked with copious amounts of sugar. It is enhanced very subtly with the pistachios, cardamom and rose petals that infuse into the lassi. This mango lassi is a great drink to serve at parties and BBQs.

    The health benefits of mangoes include; helping to lower cholesterol, having high levels of fibre, they are a good source of vitamin A and are therefore great for your eyes, they can help normalise insulin levels, they aid with digestion and they are also a great source of Vitamin C which is a known antioxidant and keeps you looking young!

    Here's what you'll need...

    • 4 medium sized Mangoes
    • 1 cup or 250g Greek Yoghurt
    • 300 ml Milk of your choice (I used Oat Milk)
    • 3 Cardamom Pods or 1/4 tsp Ground Cardamom
    • 3 – 4 Tbsp Honey or Sweetener of your choice
    • 1 tbsp crushed Pistachios
    • 1 tsp dried Rose Petals

    Here's how it's done... Step 1

    Slice and peel the mangoes.

    Bash the cardamon Pods using a rolling pin and remove the seeds. You can bash them into a fine powder if you wish but I prefer to use the seeds as they are.

    Step 2

    Add the Greek yoghurt, the milk, the mangos, the cardamom pods and the honey to your blender and blend on high until well combined and creamy.

    Pour into cups and top with the pistachios and rose petals. Remove the rose petals before you drink and enjoy!
