    Mojito-Style Candy Floss Cocktail

    The sweetness of candy floss combined with the freshness of lime and mint. What's not to love?

    When it comes to “hot weather cocktails”, a mojito is in my book one of the best. The freshness of the mint combined with the tartness of the limes and some added sweetness makes for the perfect combination. Add ice and a dash of rum and you’re ready to party. Of course this is an old favourite and since I’m not in the business of re-inventing the wheel, I usually leave the classics alone. However, I also like to play around and having a party trick up your sleeve for special occasions is never a bad idea, right? With candy floss cocktails being all the (fun) rage and sugar being a natural ingredient within the mojito, it makes complete sense to combine the two. Make this while your guests are watching and enjoy the fun of watching the candy floss melt away before their eyes.

    And in case you’re worried that you might not have the right kit to mix cocktails, well, there’s no fancy bar mixing equipment needed, just a large tumbler, a wooden spoon and a small sieve.

    Here's what you'll need...

    • 50ml white rum
    • 50ml lime juice (natural if you like it tart, cordial if you prefer it sweeter)
    • 100ml soda
    • ½ fresh lime
    • 20 fresh mint leaves
    • candy floss the size of around two handfuls (how exactly does one measure candy floss?)
    • ice cubes

    Here's how it's done... Step 1

    Cut the lime into quarters and put two pieces into a large tumbler. Pull the mint leaves off and add to the limes.

     

    Step 2

    Add a small handful of crushed ice cubes. Using your wooden spoon, muddle (ok, bash) the ingredients until the mint leaves are bruised and the limes are releasing their juice.

     

    Step 3

    Add the lime juice and rum and bash a little more. Now add the soda and stir. Put some ice into a smaller tumbler and top with the candy floss. Pour the mix through a sieve over the candy floss and watch it slowly melting away.

     

    Step 4

    Decorate with a sprig of mint and a small piece of candy floss to serve.
