"Mug recipes have always been a guilty pleasure of mine for several reasons, first of all, I’m not that much of a baker and am far too impatient to wait for a fresh batch of cupcakes or Victoria sponge to be baked when I could just quickly whip up something sugary and sweet in the microwave! Secondly because they make minimal mess, there’s no baking trays to wash up and rarely a mixing bowl in sight! Finally, I love them because if you prefer fruity type cakes (like me) but your other half, bezzie or flat mate prefers something different like chocolate flavoured cakes then you can easily make two different mug cakes in less than 10 minutes! Everybody wins!"
Add your diced apple into your mug along with the sugar and cover with cling film. Piece the film several times then pop in the microwave for 50 seconds.
Drain off any liquid in the mug then add in the banana and peanut butter to the mug.
Give it a good stir then set aside.
In a separate bowl, mix up the brown sugar, butter, flour, peanuts and peanut butter until a forms a sort of dough like consistency.
Sprinkle the mixture over top of your mug and put back in the microwave for a final 50 seconds then it’s ready to enjoy!
