"Summertime is cocktail time! Just think of all those fresh fruits that are begging to not only be eaten, but added to fabulous drinks. Just as I believe in seasonal food (you know, stews in winter and salads in summer), I believe that some drinks are better suited to certain seasons. When you add things like strawberries, apricots, pineapple and limes to a drink, it firmly belongs to summer, right? Just like mulled wine belongs to winter."
So, I wanted to put together 3 different cocktails, one tropical, one elegant and one fresh summer party drink. Admittedly, I’m not an expert on cocktails, so I have to go by what my taste buds tell me combined with some basic knowledge. The Piña Colada is sweet and creamy as expected, the Martini really flavoursome and to be handled with care, and the fizz is refreshing with a hint of sourness from the lime. My test people liked them, so I hope you will too. Remember to crush your ice cubes before adding to the blender!
Put all the ingredients except the ice into the blender and whizz for around 30 seconds on high speed. Add the crushed ice and whizz for another 10 seconds. Pour through a sieve into a large glass, decorate with the pineapple and passion fruit and serve.
Cut the strawberries into slices and put into the blender with the sugar syrup and the vanilla bean paste. Process the strawberries until you have a smooth puree. Add the vodka and triple sec, whizz for another 10 seconds. Now add the ice and whizz yet again for another 10 seconds. Strain through a sieve into the cold martini glass, decorate with a strawberry half and serve.
Quarter the apricots and put into the blender together with the lime cordial. Blend until completely smooth. Add the tequila and the crushed ice and blend for another 10 seconds. Strain through a sieve into a large ball glass. Top with prosecco and add the 3 whole ice cubes. Serve straight away.
