When you think of something like “fusion cuisine”, it’s easy to imagine that things have to get really complicated and involve a professional chef. To me, however, fusion cuisine is the simple combination of ingredients from different countries. Take quesadillas for example: originally from Mexico, they’re usually filled with cheese and beans. If you change the ingredients just a little though, say use French Camembert, you’ll straight away have a little bit of fusion cuisine right there on your plate. And the best part is of course that this is a fairly quick meal that is suitable for any season.

If you haven’t done so yet, finely chop the apple, tomatoes, chilli pepper, spring onions and basil.
Mix together with the olive oil and lime juice and set aside.
Heat your griddle pan on a medium heat and add a little oil to prevent sticking.
Now place one tortilla into the pan.
Top with some camembert slices. Once the camembert starts to melt, add some of the filling and lightly press into the cheese with a fork.
Turn the tortillas onto the other side and fry for another 2 minutes.
