Exotic and healthy, this sea bass dish is perfect for serving at a dinner party, or to your partner on a Thursday date night.
First, pre-heat the oven to 200 degrees Celsius. And while that’s heating up, roughly chop the chilli, garlic and ginger, and blend together in a food processor.
Put your blended mixture into a frying pan, along with the coconut milk, and let it simmer. Add in the sugar, continuing to stir whilst it dissolves.
Make scores in both sides of the bodies of the sea bass. Then, line a baking tray with foil and place the sea bass on top. Season each sea bass with a star anise and a handful of basil.
Pour the sugar/milk mixture evenly on top of the sea bass, and bake in the oven for 25-30 minutes (or until a thin metal skewer can slide easily into the thickest part of the fish).
Whilst the sea bass is cooking, dry toast the peanuts in a pan on the hob until they start to blacken.
Remove the fish from the oven and serve with lime wedges.
