I love summer in England. It’s my favourite day of the year. But I hate to see people queuing up to buy bland, pre-packaged, overpriced burgers. A hot summer in England is special, it’s definitely worth a little effort to create something befitting of the occasion; a BBQ classic that isn’t just insanely delicious, but actually not that bad for you.
I’m going to give you my never-fail burger recipe as well as sharing with you the secrets to making the easiest, tastiest burger in the world (possibly).
For the burgers:
500g beef mince
1 teaspoon of minced garlic
1 teaspoon of sea salt
1 teaspoon of pepper
1 tablespoon of Worcestershire Sauce
Lettuce
For the toppings:
Whatever you want! I used Edam cheese slices, sliced red onions, sliced plum tomatoes and lots of streaky bacon (I also snuck a free-range egg into there as well).
Tip: You don’t need to over season the meat, you’ll get a nice smokey flavouring from the BBQ itself, as well as from your toppings.
Mix the mince and seasoning in a large bowl. Make sure you really mix it well with your hands. Supermarket meat usually comes in ribbons that’ll fall apart when you start cooking so take some time to really mush it up with your hands.
With slightly wet hands take half a handful and shape it into a burger about ¾ inch thick. Main trick here is to make sure it’s even, so no fat middles or thin edges.
Add a little bit of olive oil to each one and rest them in the fridge for 10-20 mins while you set up the barby.
Ok… here it is, the secret to making amazing burgers and why gourmet burger restaurants are so popular… Don’t cook them the whole way through. Obviously I don’t mean serve raw meat to your guests but you want the middle to be medium-rare while the outside is perfectly cooked and juicy. Never, ever, ever squeeze your burger, you want to keep all that lovely juice inside. Flip them once, just once. Aim for around 2-3 minutes on each side, the inside should be just cooked, but still a little pink and juicy.
Put your lettuce leaves, toppings and burgers onto one large platter or cutting board and let your family and friends build their own just the way they like them.
