When it comes to hosting, we understand the stress of getting your food right. If you’re looking for some crowd-pleasing canapes for your next party, these are sure to have your guests asking for more.
First, you’ll need to prep all your vegetables. This includes cutting your lime and avocado in halves, chopping up the coriander and chilli, and crushing a clove of garlic. Spoon out your avocado into a bowl, then grab half of your lime, squeeze in its juice and mash everything together with a fork.
Wash the lettuce and set it out on a platter, and then spoon the avocado mix in.
Pour a drop of olive oil into a large pan. Once hot, add in your prawns, garlic and chilli, and stir well. You should cook these until they’re pink (usually around 4-5 minutes).
Add the prawns to the lettuce cups and finish with a sprinkle of the coriander heads and pomegranate seeds.
