    Mojito Popsicles

    There's nothing quite like a refreshing ice-lolly in this warm weather and we think these mojito popsicles are a winner!

    "As hard as it might be to believe, apparently we’re finally in for some sunshine! Yes, it’s been a very long time coming and we’re all impatiently waiting for warmer temperatures and time spent outside. Not only that, I’m sure that many of us can’t wait for ice cream season to finally begin! I mean, who really wants to still be drinking hot chocolate in May??? And if you think that ice cream and popsicles are just for kids, well, think again. When it comes to summer parties, you will need some grown up treats along the kids’ ones and this is where these fab mojito popsicles come in. Their fresh taste is perfect for a hot day and a small dash of white rum makes these popsicles a totally respectable treat for adults. The only drawback? You will probably need to make them the day before to give them enough time in the freezer to set – alternatively, you can of course get up at 4am to make them…"

    Here's what you'll need...

    • 300ml water
    • 80g sugar
    • 3 mint sprigs: stalks and half the leaves
    • finely grated zest and juice of 3 limes
    • 50ml white rum
    • extra mint leaves

    Here's how it's done... Step 1

    Put the water and sugar into a small pan and heat until the sugar is dissolved.

     

    Step 2

    Turn the heat off and add the mint stalks and leaves along with the lime zest. Leave to cool.

     

    Step 3

    Strain into a jug and discard the mint and zest.

     

    Step 4

    Add the lime juice and the white rum.

     

    Step 5

    Divide into 6 lolly moulds.

     

    Step 6

    Add the extra mint leaves to the moulds.

     

    Step 7

    Cover the moulds and insert the sticks. Freeze until solid.

     

     

    Serve.
