    Pizza Waffles

    Two words: food goals! Find out why you NEED to give our pizza waffles recipe a try!

    Who ever said that pizza needs to be flat and open faced? Well, the Italians I guess, but that’s not to say that we can’t have fun with the whole pizza concept, right? So, if you’re looking for a fun alternative to the usual pizza, then why not try pizza waffles? The idea might seem a little strange, but I promise you won’t have to somehow wrestle with liquid batter and pizza ingredients. A basic dough ensures that you can fashion little “parcels” with the mozzarella and other ingredients firmly wrapped up in it. So, why not give these a try, I’m certain even the kids will love them.

    Here's what you'll need...

    For the dough:
    350g plain flour
    3tsp baking powder
    1tsp salt
    1tbsp olive oil
    180ml water

    For the filling:
    200g mozzarella, cut into slices
    2tbsp tomato purée
    80g baby plum tomatoes, cut into slices
    Handful of fresh basil leaves
    Oil for brushing

    Here's how it's done...

    Step 1

    Mix together the dry ingredients for the dough. Add the olive oil and water and mix until it forms a ball. If needed, add a little more water until the dough is soft but not wet.

    Step 2

    Divide into eight balls.

    Step 3

    Preheat your waffle iron. Roll each ball into something resembling small squares (that’s assuming your waffle iron produces square waffles, otherwise roll into disks) to fit the waffle iron.

    Step 4

    Spread on some tomato purée.

    Step 5

    Leaving a little space around the edges, top with mozzarella slices, tomato slices and basil leaves.

    Step 6

    Place the plain dough square on top and pinch the edges together. Brush the waffle moulds with a little oil.

    Step 7

    Place the “pizza” onto the waffle iron and bake for about 10 minutes.

    Step 8

    Serve straight away or, if you’re one of those people who like cold pizza, wrap it up and take it on your next picnic.
