    Minced Beef & Feta Stuffed Courgettes

    Want a warm yet healthy alternative this summer? This meal can be served with rice or salad.

    Sometimes we need a warm meal, even in the summer months. Because, let’s face it, we’re talking summer in the UK here, not in Southern Greece. That doesn’t mean going full on stodgy or starting on the stews early though. No, it means indulging in some warming but not too heavy dishes that might throw in some Mediterranean flavours like feta cheese and smoked paprika. These stuffed courgettes are perfect for that purpose. Made without breadcrumbs, they’re not too heavy, but warm and filling on a cool summer day.

    Here's what you'll need...

    2 courgettes
    225g minced beef
    100g feta cheese
    1 medium onion, finely chopped
    1 small bunch fresh parsley, finely chopped
    1 garlic clove, minced
    1tsp smoked paprika powder
    2tbsp olive oil

    Here's how it's done...

    Step 1

    Preheat your oven to 180C. Cut the courgettes lengthwise into half and scoop out the flesh (this is best done with a melon baller).

    Step 2

    Chop up the scooped out flesh.

    Step 3

    Put the olive oil and onions into a pan and fry on a medium heat until soft.

    Step 4

    Add the paprika powder and minced garlic and stir.

    Step 5

    Now add the chopped courgette pieces, stir them in and cook for around 8-10 minutes until soft stirring occasionally.

    Step 6

    Once done, put the cooked courgette into a large bowl and add the minced beef, feta cheese and chopped parsley. Mix everything together.

    Step 7

    Divide the mix and fill the courgette halves with it. Place onto an oiled baking tray and bake for 25 minutes.

    Step 8

    Serve on their own or possibly with rice or salad on the side.
