Good morning to you all. I hope you’re well and fancy some more baking. This time I’ve decided to make something simple but very yummy and comforting, which I’m certain will be a hit with the whole family – well, it is with mine!
here's what you'll need...
- 12 mini loaf cases
- 4 large, very ripe bananas
- 250g self-raising flour
- 150g dark brown sugar
- 2 large eggs
- 100g unsalted butter
- 50g dark chocolate
- 1/2 tsp bicarbonate of soda
- 1 tsp baking powder
- 1tsp vanilla extract
set oven temp: 200C/gas mark 6
here's how it's done...

Preheat your oven to 200C (180C fan). Melt the butter over a low heat and leave to cool. Sift the flour, baking powder, bicarbonate of soda, flour, and sugar together.

Using a sharp knife, slice thin pieces of the chocolate – a bit like shavings – and add to the flour mix.

In a second bowl, mash up the bananas with a fork, then add the eggs, melted butter, and vanilla extract.

Give it a good whisk until all ingredients are combined. Now add the banana mix to the flour and, using a spatula, fold until combined. Don’t over mix the batter.

Divide the mix into the 12 cases, place them onto a baking tray and bake for about 30 minutes. Leave to cool.
That’s it! All that’s left now it to take one out of its case, pour some warm vanilla custard over it and enjoy!
