    Apple & Goat’s Cheese Tartlets

    Tartlets are one of our favourite things. Not only can they be sweet or savoury, but they can be served as a little snack, starter, or paired with a side salad to become a full meal.

    Tartlets are one of our favourite things. Not only can they be sweet or savoury, but they can be served as a little snack, starter, or paired with a side salad to become a full meal. This recipe uses a goat’s cheese and apple filling to give you a full mix of flavours.

    What you'll need...

    For the pastry

    • 250g plain flour
    • 150g butter
    • 1 egg
    • 1 tbsp of ice-cold water

    For the filling

    • 1 ½ blocks of soft goat’s cheese
    • 3 medium-sized apples
    • A small handful of walnuts
    • Dark muscovado sugar for sprinkling

    Step 1

    Pre-heat the oven to 220°c/200°c fan/gas mark 7, and dust your tart tins with flour. While the oven’s warming up, roll out your pastry, ensuring you’ll have enough to cover each tin.

    Step 2

    Cut the pastry into equal sizes and press them into the tart tins, cutting off any overhangs with a knife.

    Step 3

    Cut up the goat’s cheese and place a few slices into each tart. Then, using a spoon, press the cheese into the pastry. This should fill all the gaps and create an even layer of cheese.

    Step 4

    Peel and remove the cord from the apples. Then, slice them up into reasonable sized chunks, ready to place on top of the tarts.

    Step 5

    Place the apple slices on top of the tart, making sure to cover all the goat’s cheese. Then, sprinkle the muscovado sugar and walnuts on top to finish.

    Step 6

    Bake the tarts for 20–25 minutes, or until the apples and pastry have turned golden. Leave to cool for a few minutes before serving with a side salad.
